Pineapple and Raspberry Popsicles

Nothing beats a fresh and fruity frozen treat on a hot day and these popsicles couldn’t be easier to make.

 


Pineapple and Raspberry Popsicles


Makes: 8-10 popsicles (depending on the size of your molds) 

Ready in: 10 mins + time to freeze

Dietary: GF | DF | VEG | VGN 

 

Ingredients:

1 ripe pineapple

1 cup fresh or frozen raspberries

 

Method:

  1. Cut the skin off the pineapple and roughly chop it into small pieces. Put it into a high power blender or food processor and blend until smooth. 
  2. Place a few raspberries into each of your popsicle molds and fill with the pineapple mixture. 
  3. Freeze overnight and enjoy. 

 

Tip: 

  • Starting with a ripe juicy pineapple is the key for this recipe and how you will get a strong and sweet pineapple flavour. I look for a pineapple with a sweet smell and let it ripen for a couple days on the bench top until it is at it’s best.
