Brisket Tacos with Spicy Pineapple Black Bean Salsa & Chipotle Mayo
My pulled beef brisket recipe I posted last week makes a big batch and is the tasty gift that keeps giving throughout the week. Or throughout the month if you put portions in the freezer as I do. This recipe is one of my favourite things to do with it. Brisket Tacos with Spicy Pineapple Black Bean Salsa & Chipotle Mayo. Rich saucy brisket, sweet and spicy salsa, smokey creamy mayo, crisp purple cabbage and fresh coriander. All these flavours add up to a full flavoured perfectly balanced and delicious taco situation.
Brisket Tacos with Spicy Pineapple Black Bean Salsa & Chipotle Mayo

Ingredients:
Spicy Pineapple Black Bean Salsa
1 ½ cups diced pineapple (about ⅓ of a fresh pineapple)
1 x 400g tin of black beans, drained and rinsed
1 cup packed fresh coriander leaves and stalks, roughly chopped, plus more to garnish
½ red onion, diced
sea salt and black pepper
Chipotle Mayonnaise
¼ cup mayonnaise
1-2 tsp chipotle sauce
400g cooked pulled beef brisket (see recipe here)
2-3 small taco corn or flour tortillas per person, to serve
2 cups shredded purple cabbage, to serve
Method:
- Start with the salsa by putting all of the ingredients in a large mixing bowl and season well with sea salt and black pepper. Toss to combine and set aside.
- For the chipotle mayonnaise, mix together the mayonnaise and chipotle sauce in a small ramekin and set aside.
- Heat the brisket in the microwave, oven or in a pan on the stove. I like to heat the brisket in a pan so you get little crispy bits on the edges, yum!
- Put a frying pan on high heat and heat the tortillas, one at a time, for 10-20 seconds on each side, until warmed and slightly charred (alternatively warm them in the oven wrapped in foil).
- Plate up while the tortillas are still warm, starting with the shredded cabbage, followed by the salsa and warmed brisket, topped with a good drizzle of the chipotle mayo and garnish with fresh coriander.
Mix it up:
- This would also be great with BBQ pulled pork or spicy shredded chicken.
Skip the meat:
- For a vegetarian option, you could serve with strips of halloumi or for a vegan option serve with BBQ tofu or simply double the amount of the salsa and use vegan mayo.
