Cherry, Beetroot, Pistachio & Feta Salad with Cherry Vinaigrette

A simple festive salad highlighting some of the beautiful summers produce available at the moment, served with a fresh cherry vinaigrette that is as tasty as it is pretty. 

Fresh red cherries and beetroot along with pistachio nuts, salad green and some creamy feta cheese, this salad keeps with the Christmas colour scheme and will look gorgeous on your table during the festive season. 

 


Cherry, Beetroot, Pistachio & Feta Salad with Cherry Vinaigrette 


Serves: 6-8

Ingredients:

250g fresh cherries, halved and pitted

¼ cup olive oil

2 tbsp red wine vinegar

2 tbsp honey

sea salt and cracked pepper

300g bag of salad greens

1 small beetroot, finely sliced

100g feta, diced

¼ cup pistachio nuts, roughly chopped

 

Method:

  1. To make the cherry vinaigrette, put half of the cherries in a small blender or food processor, along with the olive oil, red wine vinegar and honey. Season well with salt and pepper and blend until smooth and well combined.
  2. To assemble the salad, fill a salad bowl or large plate with the salad greens. Top with the sliced beetroot, the remaining half of the cherries, diced feta and sprinkle over the chopped pistachio nuts. Season the salad with salt and pepper and keep covered in the fridge until serving. 
  3. Drizzle over the vinaigrette just before serving or serve on the side for everyone to help themselves. 

 

Make it dairy-free or vegan 

  • Simply use a vegan feta or skip the cheese.
