Roast Asparagus with Lemony Garlic Crumb

Hands up if you love asparagus season? This is one of my favourite ways to cook them. A super quick side dish and a tasty way to get your greens in.

 


Roast Asparagus with Lemony Garlic Crumb


 

Serves: 2-4

Ready in: 15 mins

Ingredients:

1 bunch of asparagus

extra virgin olive oil 

juice and finely grated zest of ½ a lemon

3 tbsp panko crumbs

2 tsp chopped parsley, plus more for garnish

1 garlic clove, minced or grated

sea salt and black pepper

 

Method:

  1. Preheat the oven to 200°C (400°F).
  2. Trim the hard ends off the asparagus and place them on an oven tray. Drizzle with a little olive oil and lemon juice, toss the asparagus to coat and space evenly across the oven tray. 
  3. For the crumb, mix the panko crumbs, lemon zest, parsley and garlic in a small bowl and season well with salt and pepper. 
  4. Sprinkle the crumb over the asparagus and bake for 8-10 minutes or until the asparagus is tender and the crumb has slightly browned. Garnish with some extra chopped parsley and serve hot out of the oven.

 

Like things spicy? 

  • A sprinkle of chilli flakes at the end goes great with this recipe.
