I'm Chelsea Shine. Holistic health coach, private chef, cooking instructor, recipe developer and all-round foodie.  

Most of the time you’ll find me in my happy place. The kitchen! Getting creative, experimenting, developing healthy recipes, taking photos and the best part... eating my creations and sharing food with my loved ones (and on social media for you to enjoy!). Long before I started my cooking career I was sharing my recipes online and came up with the name Shine Dining. A play on the phrase fine dining. Food done my way. The Shine way.

It’s safe to say my recipes, food styling and photography have improved since then (scroll back to my first Instagram posts for the cringe-worthy proof) and my obsession for food and cooking has only grown.

For as long as I can remember, I’ve been at my happiest in the kitchen. When I left school I wasn’t fond of the idea of working in a restaurant kitchen so I didn’t see cooking as a career option. At this point, I had no idea there were other types of jobs in the food space. After studying business at university and working in advertising for a few years, I struggled to find meaning in the work I was doing. So I set off with a backpack to travel the world for a couple of years. Early on in my travels, I found myself in a job cooking on yachts and I loved it! I freelanced as a yacht chef while I travelled. Worked and lived on board a luxury game fishing yacht for more than a year. Then ended up coming home to New Zealand to start my own business as a private chef and caterer.

 

I was raised on a farm with my family cooking wholesome meals from scratch and have always had an interest in natural health and cooking. Throughout my cooking career, I have always been known for making delicious healthy food. Clients would watch me in the kitchen asking for healthy eating and cooking tips which made me want to learn more about nutrition. Both for myself and to help others.

My passions for delicious healthy food and cooking lead me to study holistic nutrition and become a holistic health coach. I now combine my three passions for cooking, wellness and helping people and I couldn’t be more in my element.

Outside of the kitchen, you’ll find me reading, listening, researching all things health and wellness, and coaching clients towards better health.

​​It hurts my heart to realize that most women (and a lot of men) in my life: clients, family and friends, have complicated relationships with food, whether they're aware of it or not. As well as how common it is for people to struggle to maintain a healthy diet or lifestyle for the long term. Nutrition has become extremely over-complicated. All the fad diets and conflicting messages are totally confusing. I know because I have been there too! Having good intentions of taking steps towards a healthier lifestyle. Constantly chopping, changing and being confused as you hear “this worked that person” or what you thought you should be eating is now considered unhealthy. It’s all a bit of a headf**k to be honest, but there is a different way. Without restricting, depriving or punishing yourself and instead focusing on nourishment, enjoyment and kindness towards yourself.

Your mindset, your habits and your relationship with food play a bigger role in what and how you eat than most people realise. This is why working with a health coach can be so valuable.

Health does start in the kitchen but true wellness goes much further than what we eat. It’s your happiness, mindset, movement, relationship with food, body image, stress, sleep, relationships, home environment, social connection, creative outlets, finances, career satisfaction, spirituality and how much you experience joy. Things most people don’t focus on when they try to get healthy. Things that have a bigger impact than what most people realise. These all contribute to the bigger picture of your physical and mental health.

I coach clients to make realistic changes and build healthy habits in all areas. This allows them to set themselves up for long term success, so they can feel their best and get the most out of life.

As a health coach, people are often surprised to hear I eat chocolate, love pizza and red wine, don’t like diets and am not a fan of cutting out or restricting foods. While I love to cook and eat a range of vibrant and nutritious seasonal fruits, vegetables and whole foods (and teach my clients to do the same), no foods are off-limits. No restrictions. No missing out. No crazy diets. After all, it’s what you do most of the time, not what you do sometimes, that makes a real difference to your health.

Life is meant to be lived. Food is meant to be enjoyed. Taking care of your health shouldn’t be unenjoyable or a chore. You can live a healthy lifestyle and still have fun. What I like to call a deliciously healthy lifestyle.

My approach to wellness is all about balance and finding your version of healthy. Our bodies are all so unique so a one-size-fits-all approach is not realistic or helpful. A healthy and balanced lifestyle looks different for each of us. I’m dedicated to helping you find your version of healthy.

As a holistic health coach, I help to educate and guide clients around nutrition and lifestyle factors to find what works for them. There is no such thing as the perfect diet, just the one that works for you. It’s a process of becoming the investigator of your own health. Listening to your body. Understanding its needs. While having the tools and knowledge to adapt through the different seasons of life.

My goal is two-fold. To get more people in the kitchen. Inspire with delicious healthy food and recipes while teaching all the steps to make this as quick and easy as possible. With a little bit of help, anyone can become a more intuitive cook and execute healthy and delicious cooking with ease.

Secondly, to help clients make health and wellness realistic, sustainable and enjoyable for the long term. Help them to simplify nutrition, feel confident in their food choices and take a holistic approach to their health.
